UNLEAVENED BREAD RECIPE - BREAKFAST CORNMEAL FLAT CAKES


 

    BREAKFAST CORNMEAL FLAT CAKES

        3 c. water

        4 T. sugar

        ½ t. salt

        ½ c. milk

        4 T. Crisco

        1 ½ c. whitecornmeal flour

        ¾ c. unbleached flour

        In saucepan combine sugar, salt, Crisco, water. After water comes to boil, turn burner to low.

        While water is simmering add cornmeal flour and cook 5 min, stirring constantly as it thickens.

        Take off stove and alternately add little milk and little flour, mixing it all thoroughly into cornmeal.

        Place a dampened dishtowel on table and sprinkle with flour.

        With floured hands place a portion on the towel and pat into a flat cake, sprinkling with flour as needed.

        Cook on buttered pancake griddle (preheated) set on medium, turning until both sides are golden brown.
